Originally from County Kerry on the southwest coast of Ireland, I spent my life immersed in sport — from football and boxing to weight training. That lifelong dedication to fitness and wellbeing inspired a passion for creating meals that fuel performance and recovery.
Living with skin sensitivities, I avoided gluten, nuts, and dairy — but finding meals that were both nutritious and satisfying was always a challenge. I knew there had to be a better way.
Travelling the world opened my eyes to incredible flavours and cultures — from Asia to South America, each place shaped how I think about food. That sense of curiosity and adventure is baked into our menu today, from our Brazilian-inspired Salpicão to our Asian chicken curry and chilli con carne. We don't stick to one cuisine — we celebrate them all.
After years in London working in technology and fitness, I took the leap to build something that combined my love of clean eating with a desire to serve the community around me. Vanda's Kitchen opened near St Pauls Cathedral — a place where everyone could eat freely, confidently, and joyfully.
